Street Corn Chicken Casserole (Air Fryer)
Introduction:
Street corn (Elote) is beloved for its mix of charred corn, tangy lime, creamy mayo, and cheese. This casserole brings all those flavors together with tender chicken and bakes beautifully in the air fryer. Perfectly portioned for quick prep and minimal cleanup!

Ingredients:
For 2–3 servings (use 7×7 or 8×8-inch air fryer-safe dish):
2 cups cooked chicken (shredded or chopped; rotisserie works great)
1½ cups corn kernels (fresh, canned, or thawed frozen)
½ cup sour cream
⅓ cup mayonnaise
1 cup shredded Mexican cheese blend (or cheddar + Monterey Jack)
¼ cup crumbled Cotija or feta cheese
1 jalapeño, finely diced (optional)
¼ cup chopped fresh cilantro
1 tsp chili powder
½ tsp cumin
½ tsp garlic powder
Juice of 1 lime
Salt & pepper to taste
Optional topping: crushed tortilla chips, extra cheese, hot sauce drizzle
Instructions:
Preheat Air Fryer
Preheat your air fryer to 350°F (175°C) for 3–5 minutes.
Prepare the Mixture
In a large bowl, mix:
Chicken
Corn
Sour cream
Mayonnaise
¾ cup shredded cheese
Jalapeño (if using)
Cilantro
Lime juice
Chili powder, cumin, garlic powder
Salt and pepper to taste
Mix until evenly combined.
Assemble
Grease a small air fryer-safe baking dish or pan.
Spoon the mixture into the dish and spread evenly.
Sprinkle with the remaining ¼ cup shredded cheese and Cotija/feta on top.
Air Fry
Place the casserole dish in the air fryer basket.
Air fry at 350°F (175°C) for 18–22 minutes, until the top is golden, bubbly, and heated through.
Check around the 15-minute mark. If cheese browns too quickly, cover loosely with foil.
Garnish and Serve
Remove and let rest for 5 minutes.
Garnish with extra cilantro, crushed tortilla chips, and a squeeze of lime or drizzle of hot sauce.
