Ingredients
For the Potato Base:
- 3 cups mashed potatoes (fresh or leftover)
- 1 egg
- ¼ cup grated Parmesan cheese
- Salt & black pepper to taste
For the Filling:
- 1 cup cooked chicken (diced)
- ½ cup shredded cheddar cheese
- ¼ cup cooked bacon bits
- 2 tbsp sour cream or cream cheese
Optional Garnish:
- Chopped parsley
- Green onions
Instructions
- Preheat Oven
- Preheat to 200°C (400°F)
- Grease a muffin tin or line a baking tray
- Prepare Potato Mixture
- Mix mashed potatoes with egg, Parmesan, salt, and pepper
- Shape Nests
- Scoop potato mixture into muffin cups
- Press down the center to form a “nest” shape
- Bake Base
- Bake for 15–20 minutes until edges are slightly golden
- Prepare Filling
- Mix chicken, cheese, bacon, and sour cream in a bowl
- Fill Nests
- Spoon filling into each potato nest
- Final Bake
