1 lb (450g) ground beef or turkey
½ cup breadcrumbs (or panko)
1 large egg
2 tablespoons milk
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon dried oregano
½ teaspoon smoked paprika
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons fresh parsley, chopped
For the Vegetable & Cheese Filling:
½ cup finely diced bell peppers (any color)
½ cup finely diced mushrooms or zucchini
½ cup shredded mozzarella or cheddar cheese
¼ teaspoon salt
¼ teaspoon black pepper
Instructions:
Prepare the Filling
In a small bowl, mix diced bell peppers, mushrooms (or zucchini), shredded cheese, salt, and black pepper. Set aside.
Make the Meatball Mixture
In a large bowl, combine ground meat, breadcrumbs, egg, milk, garlic powder, onion powder, oregano, smoked paprika, salt, black pepper, and parsley.
Mix until just combined—don’t overwork the meat.
Stuff and Shape the Meatballs
Take about 2 tablespoons of meat mixture and flatten it into a small disc.
Place 1 teaspoon of the vegetable and cheese filling in the center.
