Ingredients:

  • 1 lb ground beef (or ground turkey)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 can (15 oz) diced tomatoes, undrained
  • 1 can (8 oz) tomato sauce
  • 1 cup beef broth (or chicken broth)
  • 1 cup uncooked rice
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Preheat the oven: to 375°F (190°C).
  2. Cook the meat: In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  3. Add vegetables: Add the chopped onion and garlic to the skillet. Cook for about 3-4 minutes until the onion is translucent.
  4. Add peppers: Stir in the chopped bell peppers and cook for another 5 minutes until they start to soften.
  5. Combine other ingredients: Add the diced tomatoes (with juice), tomato sauce, beef broth, uncooked rice, Italian seasoning, salt, and black pepper. Stir well to combine.
  6. Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 20 minutes, or until the rice is cooked and the liquid is absorbed.
  7. Transfer to baking dish: Pour the mixture into a 9×13-inch baking dish.
  8. Add cheese: Sprinkle the mozzarella and cheddar cheeses evenly over the top.
  9. Bake: Place the casserole in the preheated oven and bake for about 20 minutes, or until the cheese is melted and bubbly.
  10. Garnish and serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired. Serve hot.
