Sweet Chili Salmon Bites with Lime Yogurt Dip

Ingredients
For the Salmon:
- 1½ lbs fresh salmon, skin removed and cut into bite-sized cubes
- 3 tablespoons sweet chili sauce
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- ½ teaspoon smoked paprika
- Salt and black pepper, to taste
- Juice of ½ lime
For the Lime Yogurt Dip:
- ¾ cup plain Greek yogurt
- 1 tablespoon lime juice
- 1 teaspoon lime zest
- 1 tablespoon chopped fresh cilantro or parsley
- 1 small garlic clove, finely minced
- Pinch of salt
Instructions
1. Marinate the Salmon
In a bowl, whisk together sweet chili sauce, soy sauce, olive oil, garlic, ginger, smoked paprika, lime juice, salt, and pepper. Add the salmon cubes and gently toss to coat. Let marinate for 15–20 minutes (avoid over-marinating to keep the fish firm).
2. Bake to Perfection
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Arrange the salmon bites in a single layer, leaving space between pieces.
Bake for 10–12 minutes, or until the salmon is cooked through and slightly caramelized on the edges. For extra browning, broil for the last 1–2 minutes.
3. Make the Dip
While the salmon bakes, mix Greek yogurt, lime juice, lime zest, garlic, herbs, and salt in a small bowl. Stir until smooth and refrigerate until ready to serve.
