Ingredients:

4 medium sweet potatoes

1 tablespoon olive oil

Salt and pepper to taste

1 cup cooked chicken, turkey, or black beans (optional for protein)

1/2 cup shredded cheese (cheddar, mozzarella, or a mix)

1/4 cup Greek yogurt or sour cream

2 tablespoons fresh cilantro (optional)

1/4 teaspoon ground cumin (optional)

1/4 teaspoon smoked paprika (optional)

1 tablespoon hot sauce or salsa (optional, for added flavor)

Avocado slices (optional)

Lime wedges (optional)

Instructions:

Preheat the Oven:

Preheat your oven to 400°F (200°C).

Prepare the Sweet Potatoes:

Wash and scrub the sweet potatoes. Pat them dry with a towel. Pierce each sweet potato with a fork a few times.

Bake the Sweet Potatoes:

Place the sweet potatoes on a baking sheet and rub them with olive oil. Sprinkle with a pinch of salt and pepper. Bake for 40-45 minutes, or until the sweet potatoes are soft when pierced with a fork.

Slice the Sweet Potatoes:

Once baked, remove the sweet potatoes from the oven and let them cool for a few minutes. Slice each sweet potato down the middle lengthwise, leaving the ends intact (so the skin forms a “boat”).

Scoop Out the Flesh:

Carefully scoop out the flesh of each sweet potato, leaving about 1/4 inch along the edges. Set aside the flesh for another use, like mashed sweet potatoes or a filling.

Add Protein & Flavor (Optional):

If you want to add protein, fill the hollowed-out sweet potato boats with cooked chicken, turkey, or black beans. You can mix the filling with some spices like cumin and paprika for extra flavor.

Top with Cheese:

Sprinkle shredded cheese on top of the filling and place the boats back in the oven for about 5-10 minutes, or until the cheese is melted and bubbly.

Garnish and Serve:

Remove the sweet potato boats from the oven. Top with Greek yogurt or sour cream, fresh cilantro, a drizzle of hot sauce or salsa, avocado slices, and a squeeze of lime juice.

Enjoy: Serve warm and enjoy your delicious sweet potato boats!

Tips:

Variations: You can swap the protein for vegetarian fillings like quinoa, chickpeas, or sautéed vegetables.

Toppings: Experiment with toppings like bacon bits, scallions, or even a fried egg for extra protein.

Enjoy your healthy and customizable sweet potato boats!
