Ingredients

1 medium sweet potato, peeled and diced (about 1 cup)

½ pound sausage (pork, chicken, or turkey), crumbled

6 large eggs

¼ cup milk (or heavy cream for extra richness)

½ cup shredded cheese (cheddar, mozzarella, or feta)

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper

2 tablespoons chopped fresh parsley (optional)

1 tablespoon olive oil

Cooking spray or parchment paper for the air fryer basket

Instructions

Preheat & Prepare the Air Fryer

Preheat your air fryer to 350°F (175°C) for 3-5 minutes.

Lightly grease an oven-safe dish that fits inside the air fryer basket or line it with parchment paper.

Cook the Sweet Potatoes & Sausage

Toss diced sweet potatoes with olive oil, salt, and paprika.

Place them in the air fryer basket and cook at 375°F (190°C) for 8-10 minutes, shaking halfway through.

Meanwhile, in a pan (or in the air fryer if using an oven-safe dish), cook the sausage until browned and fully cooked. Drain excess fat.

 Prepare the Egg Mixture

In a bowl, whisk together eggs, milk, garlic powder, onion powder, black pepper, and cheese.

 Assemble & Cook

Add the cooked sweet potatoes and sausage to the greased dish.

Pour the egg mixture over the top, making sure everything is evenly distributed.

Place the dish in the air fryer and cook at 350°F (175°C) for 15-18 minutes, or until the eggs are set and the center is firm.

Let the frittata rest for 2-3 minutes before slicing.

Tips & Tricks

Use pre-cooked sausage to save time.

Swap veggies – Add spinach, bell peppers, or mushrooms for extra nutrients.

Check doneness – Insert a knife into the center; if it comes out clean, the frittata is ready.

Make it dairy-free – Use almond milk and dairy-free cheese or skip the cheese.

Store leftovers – Refrigerate for up to 3 days and reheat in the air fryer at 300°F for 3-4 minutes.
