For the Rolls:

1 can (8-count) crescent roll dough or puff pastry sheet

1 cup diced fresh strawberries

1 tbsp sugar

1 tsp lemon juice

Cheesecake Filling:

4 oz (½ block) cream cheese, softened

2 tbsp powdered sugar

½ tsp vanilla extract

½ cup powdered sugar

1–2 tbsp milk

½ tsp vanilla extract

Optional Topping:

Crushed golden Oreos or shortbread cookies (for shortcake crunch)

Whipped cream or strawberry drizzle (optional)

Instructions

Prep the Strawberry Filling:

In a small bowl, combine strawberries, 1 tbsp sugar, and lemon juice.

Let sit for 5 minutes to macerate and release juices.

Make the Cheesecake Filling:

In another bowl, mix softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.

Assemble the Rolls:

Roll out crescent dough and pinch seams to create a flat sheet (or use puff pastry).

Spread a spoonful of cheesecake filling down the center of each rectangle.

Top with spoonfuls of the strawberry mixture (avoid excess juice).

Carefully roll each up jelly-roll style and seal the edges.

Air Fry the Rolls:

Preheat air fryer to 170°C (340°F) for 3 minutes.

Place rolls in a parchment-lined or greased air fryer basket (leave space between).

Air fry at 170°C (340°F) for 10–12 minutes, or until golden brown and crisp.

Prepare the Glaze:

Whisk powdered sugar, milk, and vanilla until smooth.

Glaze and Garnish:

Drizzle warm rolls with vanilla glaze.

Sprinkle crushed shortbread or golden Oreos over top.

Optionally, top with whipped cream or extra strawberry slices.

To Serve:

Serve warm or chilled with extra glaze for dipping. These are great for brunch, dessert, or a sweet snack with iced coffee or lemonade.

Tips:

You can prep the filling ahead of time and chill until ready to assemble.

Substitute strawberries with blueberries or raspberries for a variation.

For extra indulgence, brush the rolls with butter before air frying.
