Taco Bell Cheesy Quesarito (Air Fryer Recipe)
This homemade version of the Cheesy Quesarito is a cheesy quesadilla wrapped around a flavorful beef burrito. It’s loaded with seasoned ground beef, nacho cheese, creamy chipotle sauce, and fluffy rice — then air-fried to crisp, golden perfection.

Cook Time (Air Fryer): 8–10 minutes at 375°F (190°C)

Ingredients: (Makes 2–3 Quesaritos)
For the Quesarito Wrap:
3 large burrito-size flour tortillas
1 ½ cups shredded Mexican cheese blend
1/4 cup nacho cheese sauce (store-bought or homemade)
1/4 cup sour cream or Taco Bell–style chipotle sauce
1 cup cooked white rice (optional: add a dash of lime and cilantro)
1 cup seasoned ground beef (see below)
For the Beef Filling:
1/2 lb ground beef
1 tsp chili powder
1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp paprika
Salt & pepper to taste
1 tbsp tomato paste (optional)
1/4 cup water
Instructions:
Cook the Ground Beef
In a skillet over medium heat, brown the ground beef.
Drain excess grease, then stir in seasonings, tomato paste, and water.
Simmer for 5 minutes until thickened. Set aside.
Assemble the Quesarito
Place one tortilla flat and sprinkle with shredded cheese across the whole surface.
Top with a second tortilla and microwave for 30 seconds to melt the cheese slightly (or heat briefly on a skillet).
This creates your “quesadilla” outer layer.
In the center of the top tortilla, layer:
2–3 tbsp rice
2–3 tbsp beef
1 tbsp nacho cheese sauce
1 tbsp chipotle sauce or sour cream
Roll the Quesarito
Fold in the sides, then roll up tightly like a burrito.
Repeat with remaining tortillas and filling.
Air Fry
Lightly spray the air fryer basket with oil or line with parchment.
Place Quesaritos seam-side down.
Air fry at 375°F (190°C) for 8–10 minutes, flipping halfway through, until golden brown and crisp.
Optional Chipotle Sauce Copycat:
Mix together:
1/4 cup sour cream
1 tbsp mayo
1 tsp chipotle in adobo (minced)
1/4 tsp garlic powder
Dash of lime juice and salt
Serving Suggestions:
Serve with extra nacho cheese, guacamole, or salsa on the side.
Tips:
Want it spicier? Add jalapeños or spicy salsa inside.
You can prep these ahead and air fry just before serving.
Make a vegetarian version using black beans instead of beef.
