Taco Bell’s Mexican Pizza

  • 2 large flour tortillas
  • 1 lb ground beef (or seasoned ground chicken if preferred)
  • 1 packet taco seasoning (or homemade)
  • 1 cup refried beans
  • 1 cup shredded mozzarella cheese (or a blend of mozzarella and cheddar)
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions (optional)
  • Taco sauce or mild red sauce (for spreading)
  • Oil (for frying tortillas)

Instructions:

  1. Cook the beef: In a skillet over medium heat, cook the ground beef until browned, breaking it apart with a spatula as it cooks. Drain any excess fat and add the taco seasoning along with the water indicated on the packet (usually about 2/3 cup). Simmer until the beef is fully cooked and the sauce has thickened. Set aside.
  2. Fry the tortillas: Heat oil in a skillet over medium heat. Lightly fry the flour tortillas for about 30-45 seconds per side until they’re crispy, but not too dark. You can also bake them in the oven for a slightly healthier option.
  3. Assemble the pizza:
    • Spread a thin layer of refried beans on one of the crispy tortillas.
    • Spread a thin layer of seasoned beef over the beans.
    • Add a generous sprinkle of mozzarella cheese and cheddar cheese.
    • Top with another crispy tortilla.
    • Add taco sauce or mild red sauce over the top of the second tortilla layer, followed by more cheese.
  4. Melt the cheese: Heat the entire pizza in a hot skillet (or oven) for a couple of minutes to melt the cheese. You can cover it with a lid to help it melt faster.
  5. Finish and serve: Top with diced tomatoes and sliced green onions if desired. Slice into quarters or halves, and enjoy your homemade Mexican Pizza!
