Taco Cupcakes
Taco Cupcakes are a fun and delicious variation on classic tacos! They’re ideal for parties, game days, or a quick weekday dinner, with seasoned mince beef or turkey, gooey cheddar cheese, sour cream, salsa, and fresh cilantro on top.
Ingredients:
- 1 pound ground beef or turkey.
- 1 tiny, chopped onion
- 2 garlic cloves, minced
- One packet of taco seasoning
- 1/2 cup water.
- 1 cup shredded cheddar cheese.
- 1 cup sour cream.
- 1 cup salsa.
- 1 packet chilled crescent roll dough.
- 1/2 cup sliced black olives (optional).
- Fresh cilantro, chopped (to garnish)
- Add salt and pepper to taste.
Directions:
1) Cook the meat.
- In a large skillet over medium heat, cook the diced onion and garlic until transparent.
- Cook the ground beef or turkey until browned, then use a spoon to break it apart. Drain any extra fat.
2. Season the meat.
- Stir in the taco seasoning and the water. Simmer for 5 minutes, until the mixture thickens. Season with salt and pepper to taste, then remove from the heat and allow to cool slightly.
3. Prepare the Crescent Roll Dough:
- Preheat the oven to 375°F (190° C).
- Unroll the crescent roll dough and divide it into triangles.
4. Assemble the taco cupcakes.
- Grease the muffin tin. Place each triangle of dough in a muffin cup, pressing it against the bottom and edges to create a cup.
- Spoon the taco meat mixture into each dough cup, filling them about 3/4 full.
- Sprinkle each with grated cheddar cheese.
Bake:
- Bake in a preheated oven for 12-15 minutes, or until the dough is golden brown and the cheese has melted.
6. Add toppings.
- Once baked, remove from the oven and allow to cool for a few minutes. Top each cupcake with sour cream, salsa, and chopped black olives, if preferred. Garnish with fresh cilantro.
Prep time: 15 minutes.
Cook time: 20 minutes.
