Tasty Bite of Taco Meatloaf

Tasty Bite of Taco Meatloaf: Do you want to experience some intense taste fusion? If so, you must try this tasty taco  meatloaf. All the usual components of a typical meatloaf are included in this recipe, but it’s given a Mexican twist to make it more interesting. Imagine delicate ground beef stuffed with flavourful seasonings, topped with a tangy tomato sauce and melting cheese. it’s essentially a meatloaf version of a taco.

Ingredients For Tasty Bite of Taco Meatloaf:

  • Two pounds of lean ground beef 93 percent lean 7% fat
  • One little onion, around one cup, chopped finely
  • Three minced garlic cloves (about 1 tsp)
  • One cup of drained canned corn (or fresh corn)
  • One cup of crumbled Doritos nacho cheese
  • One can of drained Rotel diced tomatoes with green chiles
  • One cup of blended cheddar cheese, shredded and separated
  • Two huge eggs
  • One tablespoon of taco spice blend
  • Enchilada sauce, half a cup

Instructions For Tasty Bite of Taco Meatloaf:

  • Preheat the oven to 375°F (190°C). Line a loaf pan with aluminum foil or gently coat it with olive oil or nonstick cooking spray.
  • Ground beef, chopped onion, minced garlic, canned corn, crumbled Doritos, drained Rotel, around ½ cup of shredded cheddar cheese, room temperature eggs, and taco seasoning should all be combined in a big dish.
  • Mix well until all of the ingredients are dispersed equally.
    Press down to create a loaf shape after transferring the ground beef mixture into the prepared loaf pan.
  • Evenly distribute the enchilada sauce on top of the meatloaf mixture.
  • After the oven has been prepared, put the loaf pan inside and bake it for 50 to 60 minutes, or until the middle of the loaf reaches 160°F (71°C). For this, I like to use an instant-read thermometer.
  • After taking the cheesy taco meatloaf out of the oven, cover it with the remaining cheese and enchilada sauce. Put it back in the oven to melt the cheese, which should take three to five minutes. Before slicing, take the meatloaf out of the oven and allow it to rest for a few minutes.
