Ingredients
For the Chicken Filling

- 1 lb (450 g) chicken breast, finely chopped or minced
- 3 cloves garlic, minced

- ½ cup bell peppers, finely chopped
- ½ cup carrots, finely chopped
- 2 green onions, sliced
Teriyaki Sauce
- ¼ cup soy sauce or tamari
- 2 tbsp honey or brown sugar
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp cornstarch mixed with 2 tbsp water
For Serving
- 1 head butter lettuce, romaine hearts, or iceberg lettuce leaves
- Sesame seeds, for garnish
- Optional: chili flakes or sriracha for heat
Instructions
- Prepare the sauce
In a small bowl, whisk together soy sauce, honey or brown sugar, rice vinegar, sesame oil, and the cornstarch slurry. Set aside. - Cook the chicken
Heat oil in a large skillet over medium-high heat. Add the chopped chicken and cook for 4–5 minutes, breaking it apart with a spoon, until mostly cooked through and lightly browned. - Add aromatics and vegetables
Stir in the garlic and grated ginger and cook for 30 seconds until fragrant. Add the chopped bell peppers and carrots and sauté for 2–3 minutes until slightly softened but still crisp. - Add the sauce
Pour the teriyaki sauce into the skillet and stir well to coat the chicken and vegetables evenly. Reduce heat to medium and let simmer for 2–3 minutes, stirring frequently, until the sauce thickens and becomes glossy. - Finish the filling
Stir in the green onions and remove from heat. Taste and adjust seasoning if needed. - Assemble the wraps
Spoon warm teriyaki chicken mixture into lettuce leaves. Garnish with sesame seeds and optional chili flakes or sriracha.
