Ingredients:
2 medium aubergines (500-600g)
100g flour
Salt and pepper
Water (for washing the aubergines)
2 eggs
Parsley
Sweet paprika
Garlic powder
100g tomato puree
100g grated mozzarella

Instructions:
- Prepare the Aubergines: Wash the aubergines and slice them into rounds, about 1/4 inch thick. Place the slices in a colander and sprinkle them with salt.
- Let them sit for about 30 minutes to release excess moisture. Rinse the salt off and pat the slices dry with paper towels.
- Coat with Flour Mixture: In a shallow bowl, mix the flour with salt, pepper, parsley, sweet paprika, and garlic powder. In another bowl, beat the eggs.
- Dip each aubergine slice into the flour mixture, then into the beaten eggs, and back into the flour mixture, ensuring they are evenly coated.
- Fry the Aubergines: Heat some oil in a large skillet over medium heat.
- Fry the coated aubergine slices in batches until they are golden brown on both sides. Place them on paper towels to drain excess oil.
- Assemble the Pizzas: Preheat your oven to 200°C (400°F). Place the fried aubergine slices on a baking sheet lined with parchment paper.
- Spread a thin layer of tomato puree on each slice. Sprinkle grated mozzarella cheese on top of the tomato puree. Season with dried oregano.
- Bake: Place the baking sheet in the preheated oven and bake for about 10-12 minutes, or until the cheese is melted and bubbly.
