Ingredients (20 cm mold):

For the Cake:

  • 2 medium eggs 🥚
  • A pinch of salt 🧂
  • 60g sugar (3 tablespoons) 🍬
  • 50g all-purpose flour (2 tablespoons + 1/2 tablespoon) 🍞
  • 10g unsweetened cocoa (1 teaspoon) 🍫

For Soaking:

  • 160ml coffee ☕
  • 2 teaspoons sugar 🍬

For the Chocolate Mousse:

  • 4 eggs 🥚
  • 200g dark chocolate 🍫
  • 100g butter 🧈
  • 20ml coffee (2 tablespoons) ☕
  • 40g sugar (2 tablespoons) 🍬

For the Chocolate Ganache:

  • 60g dark chocolate 🍫
  • 40ml milk 🥛

Instructions:

For the Cake:

  1. Preheat the oven to 180°C (350°F).
  2. Separate 2 medium eggs. Beat egg yolks with a pinch of salt.
  3. Gradually add 60g of sugar while continuing to beat until light and creamy.
  4. Sift in 50g of all-purpose flour and 10g of cocoa. Mix until well combined.
  5. In a separate bowl, beat the egg whites until stiff peaks form.
  6. Gently fold the egg whites into the cocoa mixture.
  7. Pour the batter into a 20 cm mold and bake for about 25-30 minutes or until a toothpick comes out clean.
  8. Let the cake cool.

For Soaking:

  1. Combine 160ml of coffee with 2 teaspoons of sugar. Allow it to cool.

    For the Chocolate Mousse:
  2. Melt 200g of dark chocolate with 100g of butter in a double boiler. Add 20ml of coffee and mix well.
  3. In a separate bowl, beat 4 eggs with 40g of sugar until fluffy.
  4. Gradually fold the melted chocolate mixture into the beaten eggs.
  5. Spread the chocolate mousse over the cooled cake.

For the Chocolate Ganache:

  1. Heat 60g of dark chocolate and 40ml of milk in a saucepan until smooth.
  2. Pour the chocolate ganache over the chocolate mousse.
  3. Refrigerate the cake for a few hours to set.
