The Simplest Cherry Cheesecake Without Baking
Ingredients
Regarding the crust:
- 1½ cups of crumbs from graham crackers
- Half a cup of melted unsalted butter
- Half a cup of sugar
Regarding the filling:
- 16 oz (2 packages) softened cream cheese
- One cup of powdered sugar
- One teaspoon of vanilla extract
- One cup of thick whipping cream
Regarding the garnish:
- One 21-ounce can of cherry pie filling (or, if desired, fresh cherries)
Directions
Prepare the crust:
- In a bowl, thoroughly mix the sugar, melted butter, and graham cracker crumbs.
- Fill a 9-inch springform pan with the mixture by pressing it into the bottom. Tightly pack it using the back of a measuring cup.
- While the filling is being prepared, keep it chilled.
Get the filler ready:
- Using an electric mixer, whip the softened cream cheese in a large bowl until it’s smooth.
- Add the vanilla essence and powdered sugar gradually, stirring until well combined.
- Beat the heavy cream in a separate bowl until firm peaks form.
- The whipped cream should be gently folded into the cream cheese mixture until it is well mixed.
Put together:
- Evenly cover the cold crust with the cream cheese filling.
- Set in the refrigerator for at least 4 hours (overnight is ideal if you can wait!).
Put the garnish on:
- Cover the cheesecake with the cherry pie filling before serving.
