Tiramisu Cheesecake
Ingredients
Regarding the Crust:
- 1 1/2 cups of crumbs from graham crackers
- 1/4 cup of sugar, granulated
- Half a cup of melted unsalted butter
For filling the cheesecake:
- Two packages of 16 ounces of softened cream cheese
- One cup of powdered sugar
- One teaspoon of vanilla extract
- One cup of thick whipping cream
- 1/4 cup of cold, strongly brewed coffee
- Two teaspoons of optional coffee liqueur, like Kahlua
- Half a teaspoon of dusting cocoa powder
Regarding the topping:
- Two tablespoons of dusting cocoa powder
- As a garnish, use cocoa powder or chocolate shavings (optional).
Directions
Get the crust ready:
- Put the melted butter, granulated sugar, and graham cracker crumbs in a medium basin. Stir until the crumbs are coated all over.
- To create an even layer, firmly press the mixture into the bottom of a 9-inch springform pan. While you make the filling, keep the crust refrigerated.
Prepare the filling for the cheesecake:
- Using an electric mixer, whip the softened cream cheese in a large mixing basin until it becomes smooth and creamy.
- Add the vanilla essence and powdered sugar gradually, mixing until thoroughly blended.
- Beat the heavy cream until firm peaks form in a separate bowl. Until there are no more white specks in the cream cheese mixture, gently fold in the whipped cream.
- Pour the cooled coffee and coffee liqueur (if using) into a small bowl. This mixture should be gently folded into the cheesecake filling.
Put the cheesecake together:
- Evenly cover the cold crust in the springform pan with the cheesecake filling.
- Use a fine-mesh sieve to dust the top with cocoa powder.
Calm down:
- To ensure it sets, place the cheesecake in the refrigerator for at least four to six hours, preferably overnight, covered with plastic wrap.
Serve:
- If desired, add chocolate shavings as a garnish and dust the top with extra cocoa powder before serving.
