Our Tomato Cucumber Avocado Salad is a symphony of textures and flavors. Cherry tomatoes, cucumbers, and avocado are tossed with fresh parsley, mint, and a squeeze of lemon juice, then topped with a creamy tahini dressing.

Ingredients:

½ pound red cherry tomatoes or grape tomatoes, halved

½ pound yellow cherry tomatoes or grape tomatoes, halved

2 avocados, diced

1 cucumber, sliced

⅓ cup red onion, diced

¼ cup basil pesto

1 tablespoon lemon juice

Salt and pepper to taste

Step

Thoroughly wash all vegetables.

Halve red and yellow cherry or grape tomatoes.

Carefully dice the two avocados to preserve shape.

Slice one cucumber.

Dice ⅓ cup red onion.

Mix half tomatoes, diced avocados, cucumber, and red onion in a big bowl.

Mix gently without mashing the avocados.

Mix ¼ cup basil pesto and 1 tbsp lemon juice into the salad.

Gently mix until all ingredients are covered. Using pesto and lemon juice as dressing.

Add salt and pepper to taste.

Adjust to taste since basil pesto adds flavor.
