Ingredients:
8 oz rotini or pasta of choice
1 lb shrimp, peeled and deveined
1 medium zucchini, sliced into half-moons
1 cup cherry tomatoes, halved
3 cloves garlic, minced
1/2 teaspoon red pepper flakes (optional)
1 teaspoon Italian seasoning
1/2 teaspoon paprika
2 tablespoons olive oil
1/4 cup chicken or vegetable broth
1/4 cup grated Parmesan cheese
Salt & black pepper to taste

Instructions:
Cook the pasta
according to package instructions until al dente. Reserve 1/4 cup of pasta water before draining.
Sauté the shrimp:
In a large skillet, heat 1 tablespoon olive oil over medium heat. Add shrimp, paprika, salt, and black pepper. Cook for 2-3 minutes per side until opaque. Remove and set aside.
Cook the veggies:
