Components:
1. Two cups flour that rises on its own2. Half a cup of powdered sugar

5. One egg

Directions:
1. Set your air fryer’s temperature to 350°F, or 180°C.
2. Put the sugar and self-rising flour in a big bowl. After adding the cold, cubed butter, work it into the flour with your fingertips until it resembles breadcrumbs.
3. Add the mixed dried fruit and stir.
4. Whisk the egg, milk, and vanilla essence in a another basin.
5. Gently stir until just incorporated after adding the wet components to the dry ingredients. The dough should be lumpy; take care not to overmix.
7. Using a scoop, drop spoonfuls of dough onto the air fryer basket, allowing room between each to expand.
8. The rock cakes should be cooked through and golden brown on top after 12 to 15 minutes in the air fryer.
