Traditional Sulzberger Nockerl

Ingredients

Regarding the Nockerl:

  1. Four big egg whites
  2. 1/4 tsp cream of tartar
  3. Half a cup of sugar, granulated
  4. Half a teaspoon of vanilla extract
  5. Half a cup of all-purpose flour
  6. One-fourth teaspoon of salt
  7. Two enormous yolks from an egg

Regarding the optional raspberry sauce:

  1. One cup of raspberries, either fresh or frozen
  2. 1/4 cup of sugar, granulated
  3. One tablespoon of lemon juice
  4. One tablespoon of water, if necessary

Directions

Warm up the oven:

  • Set the oven temperature to 375°F, or 190°C. Grease individual ramekins or a large baking dish with butter.

Create the Nockerl:

  • Beat the egg whites and cream of tartar together in a large bowl until soft peaks form.
  • Add the sugar gradually while beating until the mixture is glossy and stiff peaks form. It should take roughly four to five minutes.
  • Using a rubber spatula, gently mix in the flour, salt, and vanilla essence. The egg whites should not be deflated.
  • Gently fold in the egg yolks until barely blended.

Form the Nockerl:

  • In order to create the three mounds that symbolize the three peaks of the mountains that encircle Salzburg, spoon the mixture into the baking dish that has been prepared.

Bake:

  • Bake for 15 to 20 minutes in a preheated oven, or until the top of the nockerl is gently golden and puffed.

Prepare the optional raspberry sauce:

  • Make the raspberry sauce while the nockerl bakes. Put the lemon juice, sugar, raspberries, and a little water in a small saucepan.
  • Cook for 5 to 7 minutes over medium heat, or until the raspberries are broken down and the sauce has slightly thickened. You might need to add a bit more water to help the raspberries boil down if you’re using frozen ones.

  • After baking, take the nockerl out of the oven and sprinkle it with powdered sugar.
