Triple Meatloaf Stack with Cream Cheese and Lunch Meat Garnish
Ingredients:
For the Meatloaf Layers:
- 1 lb ground beef
- 1 lb ground chicken
- 1 lb ground pork
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- 1 large egg
- ½ cup milk
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp dried oregano
- ½ tsp dried basil
- ½ tsp paprika
- 1 cup grated Parmesan cheese
For the Cream Cheese Layer:
- 8 oz cream cheese, softened
- 2 tbsp sour cream
- 1 tbsp fresh chives, chopped
- Salt and pepper, to taste
For the Garnish:
- 3 slices ham
- 3 slices turkey lunch meat
- 3 slices chicken lunch meat
- 4 slices provolone cheese (or more depending on preference)
Instructions:
- Preheat your oven: Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a loaf pan for each layer of meatloaf.
- Prepare the meatloaf mixtures:
- In a large mixing bowl, combine the ground beef, ground chicken, and ground pork.
- Add the chopped onion, minced garlic, breadcrumbs, egg, milk, salt, pepper, oregano, basil, and paprika. Mix everything thoroughly until well combined, making sure the seasoning is evenly distributed.
- Form the first meatloaf layer (beef):
- Take 1/3 of the meat mixture and shape it into a loaf. If using a baking sheet, mold it into a rectangular shape about 1-2 inches thick. If using a loaf pan, press it into the pan to shape it.
- Place this beef layer in the oven and bake for about 25-30 minutes, or until it’s almost fully cooked through. This is your base layer.
- Prepare the cream cheese spread:
- While the beef layer bakes, mix together the softened cream cheese and sour cream in a bowl. Add the chopped chives, and season with salt and pepper to taste. This will create a creamy, herby layer that will sit between the meats.
- Assemble the stack:
- After the beef layer has baked, remove it from the oven and allow it to cool slightly. Spread the cream cheese mixture evenly on top of the beef.
- Next, take 1/3 of the chicken meat mixture and form it into a loaf. Place it on top of the cream cheese layer, pressing gently to ensure it sticks.
- Repeat the same process with the pork layer, forming it and placing it on top of the chicken layer. The three meats should now be stacked together.
- Final baking:
- Once all the layers are stacked, bake the entire meatloaf stack in the oven for an additional 20-30 minutes, until the pork layer is cooked through and the stack is firm.
- Garnish with lunch meat and cheese:
- While the meatloaf bakes, prepare the garnish. Arrange the slices of ham, turkey, and chicken lunch meats over the top of the stacked meatloaf.
- Lay the provolone cheese slices on top of the lunch meats, creating a final cheesy layer.
- Finish and serve:
- Once the meatloaf is fully baked, remove it from the oven. Let it rest for about 10 minutes before slicing.
- Serve with your favorite sides, like mashed potatoes or roasted vegetables, and enjoy the savory layers!
