It’s soft, fluffy, and slightly chewy with a golden, sesame-studded crust. Perfect for serving with soups, dips, or as a side to your meals.

Ingredients

For the Dough:

4 cups (500g) all-purpose flour

1 ¼ cups (300ml) warm water

1 packet (7g) instant yeast (or 2 ¼ tsp)

1 tbsp sugar

1 ½ tsp salt

2 tbsp olive oil or vegetable oil

For the Topping:

1 egg yolk

2 tbsp milk or yogurt

1 tbsp olive oil (for a glossy crust)

Sesame seeds and nigella seeds (for garnish)

Instructions

Prepare the Dough:

In a bowl, mix warm water, yeast, and sugar. Let it sit for 5–10 minutes until foamy.

In a large mixing bowl, combine flour and salt.

Add the yeast mixture and oil, then knead for about 8–10 minutes until you get a soft, elastic dough.

Cover the dough with a damp towel and let it rise in a warm place for about 1 hour, or until it doubles in size.

Shape the Bread:

Once risen, divide the dough into 4 equal pieces.

Shape each piece into a round, flat disc about 1 inch thick.

Place them on a parchment-lined baking sheet. Let them rest for 15–20 minutes.

Create the Pide Pattern:

Using your fingertips, gently press down to make a traditional crisscross pattern on the dough.

In a small bowl, mix egg yolk, milk, and olive oil, then brush it over the bread.

Sprinkle with sesame and nigella seeds.

 Bake the Bread:

Preheat your oven to 200°C (400°F).

Bake for 18–22 minutes, or until golden brown and puffy.
