Turkish Mushroom Stew Recipe
This hearty and flavorful dish is a beloved part of Turkish cuisine, showcasing mushrooms cooked in a rich, herby tomato-based sauce. Here’s how you can make it:
Preparation Time: 15 minutes
Cooking Time: 30 minutes
Servings: 4
Ingredients:
- 500 g (1 lb) fresh mushrooms (button or cremini), cleaned and sliced thickly
- 2 medium onions, finely chopped
- 3 garlic cloves, minced
- 2 medium tomatoes, finely diced (or 1 cup canned tomatoes)
- 1 tablespoon tomato paste
- 2 tablespoons olive oil or butter
- 1 teaspoon ground paprika
- 1 teaspoon dried oregano
- ½ teaspoon ground black pepper
- ½ teaspoon salt (adjust to taste)
- 1 cup vegetable stock or water
- Fresh dill or parsley, chopped (for garnish)
Instructions
1. Sauté the onions and garlic:
Heat olive oil or butter in a deep pan or pot over medium heat. Add chopped onions and sauté until they become soft and translucent. Stir in the minced garlic and cook for another 1-2 minutes.
2. Cook the mushrooms:
Add the mushrooms to the pot and cook until they release their water and begin to brown, about 5-7 minutes. Stir occasionally.
3. Prepare the sauce:
Mix in the diced tomatoes, tomato paste, paprika, oregano, salt, and black pepper. Stir well to coat the mushrooms.
4. Simmer the stew:
Pour in the vegetable stock or water, bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for about 20 minutes, allowing the flavors to meld.
5. Check consistency:
If the stew appears too thick, add a little more water or stock. Adjust the seasoning if needed.
6. Serve hot:
Ladle the steaming mushroom stew into bowls. Garnish with freshly chopped dill or parsley for a burst of freshness.
