  5. 1 tablespoon tomato paste
  6. 2 tablespoons olive oil or butter
  7. 1 teaspoon ground paprika
  8. 1 teaspoon dried oregano
  9. ½ teaspoon ground black pepper
  10. ½ teaspoon salt (adjust to taste)
  11. 1 cup vegetable stock or water
  12. Fresh dill or parsley, chopped (for garnish)

 Instructions

1. Sauté the onions and garlic:
Heat olive oil or butter in a deep pan or pot over medium heat. Add chopped onions and sauté until they become soft and translucent. Stir in the minced garlic and cook for another 1-2 minutes.

2. Cook the mushrooms:
Add the mushrooms to the pot and cook until they release their water and begin to brown, about 5-7 minutes. Stir occasionally.

Mix in the diced tomatoes, tomato paste, paprika, oregano, salt, and black pepper. Stir well to coat the mushrooms.

4. Simmer the stew:
Pour in the vegetable stock or water, bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for about 20 minutes, allowing the flavors to meld.

5. Check consistency:
If the stew appears too thick, add a little more water or stock. Adjust the seasoning if needed.
