Vegetable and Feta Breakfast Muffins Recipe

Ingredients:
6 large eggs
1/2 cup milk (or dairy-free alternative)
1 cup chopped spinach
1/2 cup diced red bell pepper
1/2 cup diced mushrooms
1/4 cup sliced black olives
1/2 cup crumbled feta cheese
1/4 tsp garlic powder
Salt and pepper, to taste
Cooking spray or muffin liners
Instructions:
1. preheat the oven:
Preheat your oven to 375°F (190°C) and grease a muffin tin with cooking spray or line it with muffin liners.
2. mix the eggs:
In a mixing bowl, whisk together the eggs, milk, garlic powder, salt, and pepper until well combined.
3. prepare the filling:
Add the spinach, red bell pepper, mushrooms, olives, and feta cheese to the egg mixture. Stir gently to combine.
4. fill the muffin tin:
Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
5. bake:
Bake for 20–25 minutes, or until the muffins are set and lightly golden on top.
6. cool and serve:
Let the muffins cool slightly before removing them from the tin. Serve warm or store for an easy grab-and-go breakfast!
