White Chocolate Cranberry Cheesecake Without Baking
Components:
Regarding the Crust:
- Eighteen squares of Graham crackers (or ten digestive biscuits, roughly 1 1/2 cups crushed)
- 2.5 oz package of crushed walnuts or pecans (about 3/4 cup, optional)
- One spoonful of sugar
- One teaspoon of optional ground cinnamon
- Six teaspoons of melted butter
For filling the cheesecake:
- Good grade white chocolate, split into bits, 14–16 ounces
- Two teaspoons of butter
- 16 oz (two blocks of 8 oz) softened cream cheese at room temperature
- 3/4 cup of heavy cream for whipping
- 1/4 cup of ultra fine white sugar
- 12 to 15 ounces of whole berry cranberry sauce, preserve, or jam
- One lemon’s zest
Directions:
Regarding the Crust:
- Put the crushed Graham crackers (or Digestive biscuits), sugar, cinnamon, and crushed nuts in a bowl.
- To ensure even moistening, add the melted butter and stir. Using the flat bottom of a glass, press the crumb mixture into the bottom of a greased 9-inch springform pan and up the sides by approximately 1/2 inch. While the filling is being prepared, chill the crust.
For filling the cheesecake:
- Melt the butter and white chocolate in a heatproof basin over water that is just simmering. Occasionally stir until smooth.
- Allow to cool a little. Beat the sugar, heavy whipping cream, and softened cream cheese in a separate bowl or with a stand mixer until smooth, about 3–4 minutes.
- Once the chocolate mixture has cooled, fold it into the cream mixture until it is well blended. Half of the cheesecake mixture should be spooned or poured into the prepared crust.
- Cover the cheesecake layer with half of the cranberry sauce or jam. You can optionally spoon it in and use a knife to gently stir.
- Evenly distribute the remaining cheesecake batter on top. To set, place the cheesecake in the fridge for at least three hours or overnight. Prior to Serving:
- Cover the cheesecake with the leftover cranberry sauce or jam using a spoon. Use a knife to gently swirl. Top with more white chocolate pieces if you’d like.
