White Chocolate Fruit & Nut Bark
This easy, no-bake treat is perfect for holidays, gifting, or a quick sweet snack. The creamy white chocolate pairs beautifully with crunchy nuts and chewy dried fruits!
Ingredients:
12 oz white chocolate (chopped or white chocolate chips)
½ cup almonds (or pistachios, cashews, or pecans), roughly chopped
½ cup dried cranberries (or raisins, apricots, or cherries)
¼ tsp sea salt (optional, for balance)
½ tsp vanilla extract (optional, for extra flavor)
1 tbsp coconut oil (optional, for smoother melting)
Instructions:
Melt the White Chocolate:
Use a double boiler: Place white chocolate in a heatproof bowl over a pot of simmering water, stirring until smooth.
Or microwave: Heat in 20-second intervals, stirring in between until fully melted. If using, stir in coconut oil and vanilla extract.
Mix in the Goodies:
Stir in half of the nuts and dried fruits, saving the rest for topping.
Spread & Set:
Line a baking sheet with parchment paper. Pour the melted chocolate mixture and spread it evenly (about ¼-inch thick).
Sprinkle the remaining nuts and fruit on top, pressing them in slightly.
Chill:
Refrigerate for 30-45 minutes until firm.
