For the Oatmeal Pancakes:

    • 1 cup rolled oats (about 90g)
    • ½ cup milk (any kind: cow’s, almond, oat, etc.)
    • 1 large egg
    • 1 tablespoon maple syrup or honey (optional)
    • ½ teaspoon vanilla extract
    • ½ teaspoon baking powder
    • ¼ teaspoon ground cinnamon (optional)
    • ¼ teaspoon salt
    • 1 tablespoon olive oil or melted butter (plus extra for cooking)

For Toppings (Optional):

    • Fresh berries (blueberries, strawberries, etc.)
    • Maple syrup or honey
    • Sliced banana or nuts
  • A dollop of yogurt or whipped cream

Steps to Make Wholesome Oatmeal Pancakes

1. Prepare the Oats

  1. Add the rolled oats to a blender or food processor and blend until they form a fine, flour-like consistency. This creates the base for your pancake batter.

2. Combine the Wet Ingredients

    1. In a mixing bowl, whisk together the milk, egg, maple syrup or honey (if using), vanilla extract, and olive oil or melted butter until smooth.

3. Mix the Dry Ingredients

  1. In a separate bowl, combine the oat flour, baking powder, ground cinnamon (if using), and salt.

4. Create the Batter

  1. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Let the batter rest for 5 minutes to allow the oats to absorb some liquid and thicken.

5. Cook the Pancakes

    1. Heat a non-stick skillet or griddle over medium heat. Lightly grease it with a small amount of butter or oil.
    1. Pour 2-3 tablespoons of batter onto the skillet for each pancake. Use the back of a spoon to spread it slightly into a circle.
    2. Cook for 2-3 minutes, or until bubbles form on the surface and the edges look set. Flip the pancake and cook for another 1-2 minutes, until golden brown and cooked through.
    3. Repeat with the remaining batter, greasing the skillet as needed.

6. Serve and Enjoy

  1. Serve the pancakes warm, stacked high, and topped with your favorite toppings such as fresh berries, banana slices, or a drizzle of syrup.
