WW Skinny Creamy Broccoli Salad

Ingredients:

  • 4 cups broccoli florets, chopped
  • 1/2 cup non-fat Greek yogurt
  • 2 tablespoons light mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • 1/4 cup red onion, finely chopped
  • 1/4 cup raisins or dried cranberries
  • 2 tablespoons sunflower seeds
  • Salt and pepper to taste

Instructions:

  1. In a large mixing bowl, combine the chopped broccoli, red onion, raisins or dried cranberries, and sunflower seeds.
  2. In a separate bowl, whisk together the non-fat Greek yogurt, light mayonnaise, apple cider vinegar, honey or maple syrup, salt, and pepper.
  3. Pour the dressing over the broccoli mixture and toss until well coated.
  4. Refrigerate the salad for at least 1-2 hours to allow the flavors to meld.
