Total Time: 40-50 minutes
Servings: 12 slices
Ingredients
- 12 large eggs
- 1/2 cup (1 stick) unsalted butter, melted
- 8 oz cream cheese, softened
- 1 cup pork rinds, ground into a fine powder (about 2-3 cups of whole pork rinds)
- 2 tsp baking powder
- 1 tsp salt
Instructions
- Preheat Oven:
- Preheat your oven to 375°F (190°C). Grease a standard loaf pan (9×5 inch) or line it with parchment paper.
- Prepare Pork Rinds:
- Place pork rinds in a food processor and grind until they become a fine powder. Measure out 1 cup of the powdered pork rinds.
- Mix Wet Ingredients:
- In a large mixing bowl, beat the eggs until frothy using an electric mixer. Add the melted butter and softened cream cheese, and continue to mix until smooth and well combined.
- Combine Dry Ingredients:
- In a separate bowl, mix the ground pork rinds, baking powder, and salt.
- Combine Wet and Dry Ingredients:
- Gradually add the dry ingredients to the wet ingredients, mixing continuously until you have a smooth batter.
- Pour and Bake:
- Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake in the preheated oven for 30-40 minutes, or until the bread is golden brown and a toothpick inserted into the center comes out clean.
- Cool:
- Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.
