ZERO CARB CARNIVORE BREAD

Ingredients

  • 12 large eggs
  • 1/2 cup (1 stick) unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup pork rinds, ground into a fine powder (about 2-3 cups of whole pork rinds)
  • 2 tsp baking powder
  • 1 tsp salt

Instructions

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C). Grease a standard loaf pan (9×5 inch) or line it with parchment paper.
  2. Prepare Pork Rinds:
    • Place pork rinds in a food processor and grind until they become a fine powder. Measure out 1 cup of the powdered pork rinds.
  3. Mix Wet Ingredients:
    • In a large mixing bowl, beat the eggs until frothy using an electric mixer. Add the melted butter and softened cream cheese, and continue to mix until smooth and well combined.
  4. Combine Dry Ingredients:
    • In a separate bowl, mix the ground pork rinds, baking powder, and salt.
  5. Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the wet ingredients, mixing continuously until you have a smooth batter.
  6. Pour and Bake:
    • Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake in the preheated oven for 30-40 minutes, or until the bread is golden brown and a toothpick inserted into the center comes out clean.
  7. Cool:
    • Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.
