Zucchini and Oatmeal Bites with Parmesan
Ingredients:
– 2 small zucchini
– 1 teaspoon salt
– 1 cup oatmeal
– 100g Parmesan cheese
– 2 eggs
– Dry garlic (to taste)
Instructions:
1. Begin by grating the 2 small zucchinis.
2. Place the grated zucchini in a bowl and add 1 teaspoon of salt. Allow it to sit for 10 minutes.
3. After 10 minutes, squeeze out any excess moisture from the grated zucchini using a clean kitchen towel or paper towels.
4. In a separate bowl, combine the drained zucchini with 1 cup of oatmeal.
5. Grate 100g of Parmesan cheese and add it to the zucchini and oatmeal mixture.
6. Crack 2 eggs into the mixture and add dry garlic to taste. Mix everything well to form a batter.
7. Preheat your oven to 200°C (400°F).
8. Using a spoon or your hands, shape the mixture into bite-sized portions or patties and place them on a baking sheet lined with parchment paper.
9. Bake the zucchini and oatmeal bites in the preheated oven for approximately 20 minutes or until they turn golden brown and crispy.
