Zucchini in the air fryer is amazing! It comes out perfectly cooked and soaks up any seasoning you add to it! This is my go-to side dish this time of year and it’s so good.
Indulge in the crispy goodness of our Air Fryer Zucchini! This simple and healthy recipe transforms zucchinis into a tender, golden-brown delight, perfect as a snack or side dish.
INGREDIENTS:
- 2 medium zucchini – cut into 1/4 inch slices (about 3–3.5 cups)
- 3 teaspoons olive oil
- 2 tablespoons grated parmesan cheese
- 1 teaspoon Chili Powder
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
INSTRUCTIONS:
- Use a sharp kitchen knife to cut the zucchini into half moon shapes or 1-inch size pieces. Then add the cut zucchini to a medium size mixing bowl.
- In a smaller bowl, combine the parmesan cheese, chili powder, garlic powder, Italian seasoning, salt and pepper.
- Drizzle the olive oil over the zucchini and toss to coat it all then add the seasoning and toss again.
- Preheat the air fryer to 400 degrees F and spray the basket with olive oil cooking spray to prevent sticking.
- Add the zucchini to the air fryer basket in an even layer.
- Close the air fryer and cook at 400 degrees F for 15-17 minutes.
- Serve immediately and enjoy!
