Zucchini in the air fryer

Zucchini in the air fryer is amazing! It comes out perfectly cooked and soaks up any seasoning you add to it! This is my go-to side dish this time of year and it’s so good.
Indulge in the crispy goodness of our Air Fryer Zucchini! This simple and healthy recipe transforms zucchinis into a tender, golden-brown delight, perfect as a snack or side dish.
INGREDIENTS:
  1. 2 medium zucchini – cut into 1/4 inch slices (about 3–3.5 cups)
  2. 3 teaspoons olive oil
  3. 2 tablespoons grated parmesan cheese
  4. 1 teaspoon Chili Powder
  5. 1 teaspoon garlic powder
  6. 1 teaspoon Italian seasoning
  7. 1/2 teaspoon kosher salt
  8. 1/4 teaspoon ground black pepper
INSTRUCTIONS:
  1. Use a sharp kitchen knife to cut the zucchini into half moon shapes or 1-inch size pieces. Then add the cut zucchini to a medium size mixing bowl.
  2. In a smaller bowl, combine the parmesan cheese, chili powder, garlic powder, Italian seasoning, salt and pepper.
  3. Drizzle the olive oil over the zucchini and toss to coat it all then add the seasoning and toss again.
  4. Preheat the air fryer to 400 degrees F and spray the basket with olive oil cooking spray to prevent sticking.
  5. Add the zucchini to the air fryer basket in an even layer.
  6. Close the air fryer and cook at 400 degrees F for 15-17 minutes.
  7. Serve immediately and enjoy!

1. Choose the right zucchinis: Opt for medium-sized zucchinis with a slightly sweet flavor.
2. Don’t overcrowd the air fryer: Cook the zucchinis in batches to ensure they have enough room to cook evenly.
