Ingredients:

Zucchini: 1-2 pieces
Salt: to taste
Flour: 2 tablespoons (30g)
Eggs: 2 pcs
For the Filling:
Sour cream: 2 tablespoons (30g)
Hard cheese: 100g (about 1 cup), grated
Tomatoes: 1 piece, chopped
Parsley: 1 bunch, chopped
Garlic: 1-2 cloves, minced
Vegetable oil: for frying

Directions:

Prepare the Zucchini:
Slice the zucchini lengthwise into thin strips. Sprinkle with salt and let sit for a few minutes.
Coat and Fry:
Dredge the zucchini slices in flour, then dip in beaten eggs. Heat vegetable oil in a pan and fry the zucchini strips until golden on both sides. Remove and let cool.
Prepare the Filling:
In a bowl, mix sour cream, grated hard cheese, chopped tomatoes, parsley, and minced garlic until well combined.
Assemble the Rolls:
Spread a thin layer of the filling on each zucchini strip, then roll up carefully. Secure with a toothpick if needed.
