Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 celery stalks, sliced
  • 2 medium potatoes, diced
  • 15 oz diced tomatoes
  • 8 oz tomato sauce
  • 2 tsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • 5 cups beef broth
  • 2 cups frozen mixed vegetables (corn, peas, carrots)
  • Fresh parsley (optional)

Instructions

  1. Brown ground beef in a skillet, drain excess fat.
  2. Add beef and all remaining ingredients except frozen vegetables to the crockpot.
  3. Cover and cook LOW 6–8 hours or HIGH 3–4 hours.
  4. Stir in frozen vegetables during the last 30 minutes.
  5. Garnish with parsley and serve hot.

Ingredients

  • 1 lb ground beef
  • 4 tbsp butter
  • 1 small onion, diced
  • 3 medium russet potatoes, peeled & cubed
  • 3 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 tsp Italian seasoning
  • ½ tsp oregano
  • 1 tsp salt
  • ½ tsp pepper
  • 3 tbsp all-purpose flour
  • 2 cups shredded sharp cheddar cheese
  • ¾ cup milk
  • ¾ cup sour cream

Instructions

  1. Brown ground beef; drain.
  2. Add beef, potatoes, broth, vegetables, and seasonings to crockpot.
  3. Cook LOW 6–7 hours or HIGH 3–4 hours until potatoes are tender.
  4. Melt butter in a pan, whisk in flour, then milk to form a slurry.
  5. Stir slurry into soup, then add cheese and sour cream.
  6. Cook 15–20 more minutes until creamy.

Instructions
