Air fryer yellow squash is one of the easiest side dishes, and it is healthy too. This summer vegetable goes well with grilled recipes.

Summer Squash has a little sweet taste, that’s why we will not use extra or too much seasoning for this veggie because it will lose its original taste. This simple recipe can use for all summer squash such as zucchini, pattypan squash, or crookneck squash.

  • 1 Medium Yellow squash: Avoid taking big-sized squash because it has larger seeds and is also juicier than small squash. So it turns into a mushy texture during cooking.
  • 1 TBS Oil olive oil or you can use butter
  • 1 TBS Seasoning of your choice. I used salt, pepper, and garlic powder

  1. Slice: First, slice the yellow squash thin, approximately in 2-3 mm so, that it will come out with crispy edges.
  2. Season: Put all the slices in a bowl and add one tablespoon of oil. Now season it with salt, pepper, and garlic powder as per your choice and toss them so the seasoning is equally spread to each slice.
  3. Air fry: Preheat the air fryer to 390°F/198°C for 3 minutes. And then put all the slices in the air fryer basket. Cook for 10 minutes. Turn squash slices on the other side halfway through the cooking so both sides cook perfectly roasted and caramelized.

Variations for fried squash

This recipe for air fryer yellow squash is cooked with tasty, crispy edges and caramelized on top. To make it more crispy and crunchy you need to cut it into thin slices or roll them in breadcrumbs.

You can change the seasoning as per your choice. For example, you only add a little bit of salt or you can only make it with butter or add soya sauce instead of salt. The more simple with the seasoning, the tastier it comes out.
