Almonds Cookies in 15 minutes/Chocolate Almonds Cookies
These chocolate almonds cookies are gluten-free and dairy-free with their almond flour base. Some cocoa powder gives these cookies an extra kick of flavor! Feel free to look over my other videos, if you like them subscribe to my channel and support me ❤️
Ingredients
- 2 large eggs room temp
- 1/2 cup sugar-100 g
- 1/4 cup cocoa powder-25 g
- 1 teaspoon vanilla extract-5 ml
- 1 teaspoon baking powder- 5 g
- 2 1/4 cups almonds flour -225 g
- 1/3 cup powdered sugar-40 g
Directions:
- Preheat oven to 325 degrees. Line a baking sheet with parchment.
- In a large bowl, whisk together eggs, sugar, cocoa powder and vanilla extract. Add almonds flour and baking powder and mix until is combined. Use a 1 tablespoon cookie scoop to scoop and roll 16 cookie dough balls.
- The dough will be quite sticky. Roll each dough ball in a small bowl of powdered sugar to completely cover the outside.
- Place the dusted cookies on a parchment-lined baking sheet and bake for 16-18 minutes until the cookies are just set.
- The cookies will be soft. Allow the cookies to cool on the baking sheet for about 15 minutes.
Storage Instructions:
- Cooled cookies will keep well in an air-tight container at room temperature for up to 10 days.
Freezing Instructions:
- Cooled cookies can be frozen in a freezer-safe container for up to 2 months.
