Ingredients
  • 2 lbs chicken breast
  • 3/4 lbs fettuccine pasta (or angel hair or vermicelli pasta)

  • 3 1/2 cups half and half*
  • 1/4 cup parsley, finely chopped, plus more for garnish

  • 1 Tbsp butter
Instructions
Step 1: Cook the Pasta
  1. Cook the fettuccini in a pot of salted water (4 quarts water, 1 Tbsp salt) according to package instructions. Drain and set aside.
Step 2: Prepare the Chicken
  1. Slice the chicken into strips and season all over with salt and pepper.
  2. In a large skillet, heat 2 Tbsp olive oil over medium/high heat. Sauté the chicken until lightly golden and cooked through, about 5 minutes. Remove chicken from the pan and cover to keep warm.
Step 3: Cook the Vegetables
  1. In the same pan, over medium/high heat, add 1 Tbsp olive oil and 1 Tbsp butter. Add the finely chopped onion and sauté for 3 minutes until soft.
  2. Add the sliced mushrooms and sauté until soft, about 5-7 minutes, stirring frequently. Add the minced garlic and sauté for 30 seconds, stirring constantly.

Step 4: Make the Alfredo Sauce
  1. Add the half and half to the pan and simmer over medium/high heat for 8-10 minutes, or until it begins to thicken.
