Classic Cream Cheese Spinach Puffs

Ingredients:

  1. 1 sheet puff pastry
  2. 7 oz baby spinach
  3. 2 garlic cloves, minced
  4. 1 tbsp olive oil
  5. 8 oz cream cheese
  6. 1/2 cup mozzarella cheese
  7. 1 egg
  8. 1 egg yolk
  9. 1 pinch salt
  10. 1 pinch black pepper

Directions:

  1. Preheat the oven to 400 degrees F (200 C) and line a baking tray with parchment paper.
  2. Heat a pan over medium heat, add olive oil, and when hot, sauté the garlic for 2 minutes or until soft.
  3. Then, add the spinach, season with a pinch of salt and pepper, and sauté until soft. Remove the pan and set it aside to cool down.
  4. Cut the puff pastry sheet into 6 or 12 squares, depending on the size you desire, and place them on the baking tray. This recipe makes six big puffs or 12 small puffs.
  5. In a mixing bowl, add the cooled spinach, cream cheese, mozzarella cheese, and one egg. Season with a pinch of salt and pepper and mix everything.
  6. Divide the spinach mixture among each square and fold two opposite edges of each square, pressing them tightly.
  7. Brush all the spinach puffs with egg yolk. Bake for 25 to 35 minutes or until golden.
