Ingredients
For the Meat Filling:
1 tbsp olive oil
1 lb ground lamb (or beef for Cottage Pie)
1 small onion, diced

2 medium carrots, diced
1/2 cup frozen peas
1/2 cup frozen corn
2 tbsp tomato paste
1 tbsp Worcestershire sauce
1 tsp fresh thyme (or ½ tsp dried)
1 tsp fresh rosemary (or ½ tsp dried)
1/2 tsp salt (adjust to taste)
1/2 tsp black pepper
1 cup beef broth (or vegetable broth)
1 tbsp all-purpose flour (or cornstarch for gluten-free)
For the Mashed Potato Topping:
2 lbs potatoes peeled and cubed
1/2 cup milk
4 tbsp unsalted butter
1/2 cup shredded feta cheese (optional, for extra creaminess)
1/2 tsp garlic powder (optional)

Instructions
Make the Mashed Potatoes
Place the cubed potatoes in a large pot of cold salted water.
Bring to a boil and cook for 15 minutes, or until fork-tender.
Drain and return the potatoes to the pot.
Mash the potatoes, then add butter, milk, salt, and garlic powder. Mix until smooth and creamy. Stir in feta cheese (if using).
Prepare the Meat Filling
Preheat the oven to 400°F (200°C).
Heat olive oil in a large skillet over medium heat.
Add diced onion, garlic, and carrots. Sauté for 3-4 minutes until softened.
Add ground lamb (or beef) and cook for 5 minutes, breaking it apart with a spatula until browned.
Stir in tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Mix well.
Sprinkle in flour and cook for 1 minute to thicken.
Pour in beef broth and let the mixture simmer for 5 minutes, stirring occasionally.
Stir in peas and corn, then remove from heat.
Assemble & Bake
Transfer the meat filling to a 9×9-inch baking dish (or similar size).
Spread the mashed potatoes evenly over the filling. Use a fork to create texture on top for crispier edges.
Bake uncovered for 20-25 minutes, or until golden brown on top.
Let it rest for 5 minutes before serving.
