Cooking Spinach with Potatoes: A Spanish Delight

Ingredients
- 450 g of potatoes
- 1 onion
- 250 g of spinach
- 4 eggs
- 4 tablespoons of sour cream
- 1 teaspoon of garlic powder
- 1 teaspoon of baking powder
- 150 g of hard cheese (mozzarella or any of your choice)
Procedure
Washing and Preparing the Potatoes
- Begin by washing the potatoes thoroughly under running water to remove any dirt.
- Peel the potatoes and cut them into medium-sized cubes.
- Place the cubed potatoes in a pot and cover them with water. Add 1-1 1/2 teaspoons of salt to the water.
- Boil the potatoes on medium heat for 5-7 minutes until they are soft. Test their readiness by piercing them with a fork.
- Once cooked, strain the potatoes from the water and let them cool slightly.
Preparing the Onion and Spinach
- While the potatoes are boiling, finely chop one onion.
- Heat a pan with a little oil over low heat and add the chopped onion.
- Cook the onion until it softens, stirring constantly to prevent burning.
- Wash the spinach thoroughly and cut it into thin strips, discarding any damaged parts.
- Add the spinach to the pan with the cooked onion and cook for 3-4 minutes until the spinach wilts.
