Crunchy Strawberry Delight Cookies
A soft, buttery base, a crunchy, strawberry-infused topping, and a white chocolate drizzle are all combined in these cookies. A delightful delicacy that is equally gorgeous as it is good!
Components:
- One cup of softened unsalted butter
- One cup of sugar crystals
- Half a cup of powdered sugar
- One big egg
- One teaspoon of extract from vanilla
- All-purpose flour, two cups
- Baking powder, one teaspoon
- Half a teaspoon of salt
- One cup of freeze-dried, crushed strawberries
Regarding the topping:
- One cup of freeze-dried, crushed strawberries
- Half a cup of powdered sugar
- One cup of optional powdered sugar for sprinkling
Regarding the Drizzle of White Chocolate:
- One cup of white chocolate chips
- One tablespoon of optional vegetable oil
Directions:
Preheat: Line a baking sheet with parchment paper and preheat the oven to 350°F (175°C).
Prepare the Dough: Cream the butter, powdered sugar, and granulated sugar in a big bowl until it’s light and fluffy. Add the egg and vanilla essence and stir.
Mix Dry Ingredients: Mix the flour, baking powder, and salt in a separate basin. Add to the wet ingredients gradually and stir until incorporated. Add crushed freeze-dried strawberries and fold.
Make the topping by combining granulated sugar and crushed freeze-dried strawberries in a small bowl.
Create Cookies: Drop dough onto the baking sheet with a cookie scoop, leaving 2 inches between each drop. Press the cookie tops into the mixture of sugar and strawberries.
Bake: Bake until sides are just beginning to turn brown, 12 to 15 minutes. After a few minutes of cooling on the baking sheet, move to a wire rack.
White Chocolate Drizzle: In the microwave, melt white chocolate chips in 30-second increments while stirring until smooth. If you want a thinner consistency, add vegetable oil.
Drizzle and Serve: Cover the cookies with melted white chocolate when they have cooled. To maintain freshness, store in an airtight container.
