Eggplant Rollatini Recipe (Classic Italian Style)
Eggplant Rollatini ek classic Italian-inspired dish hai jisme thin sliced eggplant ko creamy cheese filling ke sath roll karke rich tomato sauce me bake kiya jata hai. Yeh dish vegetarian hai, healthy hai aur dinner ke liye perfect option hai.

Ingredients:
Eggplant ke liye:
2 large baingan (eggplant)
1 tsp salt
2 tbsp olive oil
Filling ke liye:
1 cup ricotta cheese
½ cup mozzarella cheese (grated)
¼ cup parmesan cheese
1 egg
2 tbsp chopped parsley (ya hara dhania)
1 tsp garlic (chopped)
Salt & black pepper (taste ke mutabiq)
Sauce ke liye:
2 cups marinara sauce (ready-made ya homemade)
1 tsp oregano
Method:
1️⃣ Eggplant prepare karo:
Baingan ko lambe patle slices me cut karo
Un par thoda salt laga kar 15 min ke liye rakh do (ta ke bitterness nikal jaye)
Phir wash karke dry karo
Light oil laga kar tawa ya oven me soft hone tak cook karo
2️⃣ Filling banao:
Ek bowl me ricotta, mozzarella, parmesan, egg, garlic, parsley, salt & pepper mix karo
Achi tarah smooth mixture bana lo
3️⃣ Rolls banao:
Har eggplant slice lo
Us par 1-2 tbsp filling lagao
Roll karke shape de do
4️⃣ Baking:
Baking dish me thodi marinara sauce spread karo
Upar rolls rakh do
Phir upar se aur sauce aur mozzarella cheese daal do
👉 Bake karo:
180°C (350°F) par 25–30 minutes
Jab tak cheese melt aur golden na ho jaye
Serve:
Garam garam serve karo
Upar se thoda parsley ya parmesan sprinkle kar lo
Tips:
Agar oven nahi hai to pan me bhi slow flame par cover karke bana sakti ho
Chicken version bhi bana sakti ho (filling me shredded chicken add karke)
Zyada creamy chahiye to thoda cream bhi add kar lo
