Melon Thyme Shrub (Drinking Vinegar)
Description
Melon Thyme Shrub is a refreshing, tangy-sweet drink made from fresh melon, aromatic thyme, sugar, and vinegar. This old-fashioned “drinking vinegar” is both flavourful and functional—perfect for mixing with sparkling water, cocktails, or enjoying as a cooling summer beverage. It’s bright, herbaceous, and beautifully balanced.
Ingredients
- 2 cups ripe melon (cantaloupe or honeydew), cubed
- ¾ cup sugar (adjust to taste)
- ½ cup apple cider vinegar
- 3–4 sprigs fresh thyme
- Pinch of salt
- Sparkling water or still water (for serving)
- Ice (optional)
Instructions
- Place melon cubes in a bowl and mash slightly to release juices.
- Add sugar and mix well.
- Cover and refrigerate for 12–24 hours to macerate (draw out juices).
- Strain mixture through a fine mesh sieve, pressing to extract all liquid.
- Stir in apple cider vinegar, thyme sprigs, and a pinch of salt.
- Let the mixture sit for 24 hours to infuse flavours.
- Remove thyme and transfer shrub to a sealed bottle.
