Flourless Chocolate Coffee Cake with Chantilly Cream

Indulge in the rich flavors of this flourless chocolate coffee cake topped with Chantilly cream!

For the Chocolate Cake:

Ingredients:
  • 100g Dark Chocolate
  • 85g Butter
  • 6g Cocoa Powder
  • 100g Sugar
  • 6 eggs
  • 1g Salt

Instructions:

  1. Preheat your oven to 180°C (356°F). Grease and line a cake pan with parchment paper.
  2. In a heatproof bowl, melt the dark chocolate and butter together. You can do this over a double boiler or in the microwave in short bursts, stirring in between until smooth.
  3. Stir in the cocoa powder and sugar into the melted chocolate-butter mixture until well combined.
  4. Separate the egg yolks from the whites. Add the yolks to the chocolate mixture and mix until fully incorporated.
  5. In a separate clean bowl, beat the egg whites with a pinch of salt until stiff peaks form.
  6. Gently fold the beaten egg whites into the chocolate mixture until there are no visible streaks.
  7. Pour the batter into the prepared cake pan and bake for 10 to 12 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.

For the Chocolate Coffee Chantilly Cream:

Ingredients:
  • 130g Dark Chocolate
  • 75g Milk
  • 10g Coffee Beans
  • 300g Whipping Cream
  • 25g Sugar

Instructions:

  1. In a saucepan, heat the milk until it’s hot but not boiling. Remove from heat and add the coffee beans. Let them steep for about 10 minutes to infuse the coffee flavor into the milk.
  2. Strain the milk to remove the coffee beans and return it to the saucepan. Reheat the milk and add the dark chocolate. Stir until the chocolate is completely melted and the mixture is smooth. Let it cool.
  3. In a separate bowl, whip the whipping cream and sugar until stiff peaks form.
  4. Gently fold the cooled chocolate-coffee mixture into the whipped cream until well combined.
  5. To Assemble:
  6. Once the chocolate cake has cooled, remove it from the pan and place it on a serving plate.
  7. Spread the chocolate coffee Chantilly cream generously over the top of the cake.
  8. Finish with chocolate shavings as decoration.
