Garlic Roasted Chicken and Potatoes

Here’s a simple and flavorful recipe for garlic roasted chicken and potatoes:


For the Chicken:

  • 4 bone-in, skin-on chicken thighs
  • Salt and black pepper to taste
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil

For the Potatoes:

  • 4 cups baby potatoes, halved or quartered
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste

Optional Garnish:

  • Fresh parsley, chopped


  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, mix together the paprika, dried thyme, minced garlic, salt, black pepper, and olive oil to create a marinade for the chicken.
  3. Pat the chicken thighs dry with paper towels and rub the marinade all over them. Make sure to get the marinade under the skin as well.
  4. In a separate bowl, toss the halved or quartered baby potatoes with olive oil, minced garlic, dried rosemary, salt, and black pepper.
  5. Place the marinated chicken thighs on one side of a baking sheet and arrange the seasoned potatoes on the other side.
  6. Roast in the preheated oven for about 35-40 minutes or until the chicken is golden brown and cooked through, and the potatoes are tender. You can turn the potatoes halfway through for even cooking.
  7. Once done, remove from the oven, and let it rest for a few minutes.
  8. Garnish with chopped fresh parsley if desired before serving.
