 Ingredients

 Fish

  • 2 cloves garlic (minced)
  • 3 green onions (chopped)
  • 1–2 red chilies (sliced, optional) 🌶️
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 2 tbsp water or chicken broth

 Instructions

  1. Prep fish:
    Pat sea bass dry and season with salt and pepper.
  2. Pan-fry:
    Heat oil in a pan over medium-high heat.
    Place fish skin-side down and cook for 4–5 minutes until crispy.
    Flip and cook another 2–3 minutes until fully done. Remove and set aside.
  3. Make sauce:
    In the same pan, add oil, ginger, and garlic. Sauté until fragrant.
    Add green onions and chilies, cook briefly.
  4. Add seasoning:
    Stir in soy sauce, oyster sauce, sugar, and water. Simmer for 1–2 minutes.
  5. Assemble:
    Pour hot ginger-onion sauce over the fried sea bass.
  6. Serve:
    Garnish with extra green onions and serve immediately.
