 Ingredients

 For the Onions:

  • 6 large onions, peeled
  • Water for boiling

 Filling:

  • 1 cup rice (short or medium grain)
  • ½ lb ground beef or lamb (optional)
  • 1 small onion, finely chopped
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill or mint
  • 1 tsp dried oregano
  • Salt & black pepper to taste

 Sauce:

  • 1½ cups crushed tomatoes
  • 2 tbsp olive oil
  • 1 tbsp tomato paste
  • ½ cup water or broth
  • Salt & pepper

 Instructions

Start by preparing the onions. Bring a large pot of water to a boil and add whole onions. Boil for 10–12 minutes until slightly softened. Remove and let cool, then carefully separate the layers to create shells for stuffing.

In a pan, heat olive oil over medium heat. Add chopped onion and garlic, sauté until soft and fragrant. Add ground meat (if using) and cook until browned.

Stir in rice, parsley, dill or mint, oregano, salt, and pepper. Cook for 2–3 minutes to combine flavors. Add a splash of water and cook briefly until the mixture slightly softens.

Take each onion layer and spoon a small amount of filling inside, then gently roll or fold it into a stuffed bundle. Place the stuffed onions seam-side down in a baking dish.

In a bowl, mix crushed tomatoes, olive oil, tomato paste, water, salt, and pepper. Pour this sauce evenly over the stuffed onions.

Cover the dish with foil and bake in a preheated oven at 375°F (190°C) for 45–60 minutes, until the onions are tender and the rice is fully cooked.

Let cool slightly before serving to allow flavors to settle.
