Green Goddess Salad

INGREDIENTS

  • 2 cup cabbage finely chopped
  • 1 habanero finely chopped
  • 1/2-1 cucumber large
  • 1/2 small jicama finely chopped
  • 3/4 cup shelled edamame fresh or thawed

Green Goddess Dressing

  • 1 cup fresh dill
  • 1 cup fresh parsley
  • 1 cup fresh basil leaves
  • 1 cup fresh mint or cilantro
  • 1/2 mayo
  • 1 lime juice only
  • 1/2 tsp salt

INSTRUCTIONS

  • In a large mixing bowl, combine the finely chopped cabbage, diced habanero pepper, jicama, cucumber, and shelled edamame. Toss gently to mix evenly.
  • For the Green Goddess Dressing, in a blender or food processor, combine the fresh dill, parsley, basil, mint or cilantro, mayonnaise, lime juice, and salt. Blend until smooth and creamy.
  • Drizzle the Green Goddess Dressing over the salad mixture, starting with a small amount and adding more to taste. Toss the salad gently until all ingredients are coated evenly with the dressing.
  • Serve immediately as a refreshing side dish or as a light and nutritious meal on its own.
