INGREDIENTS
- 2 cup cabbage finely chopped
- 1 habanero finely chopped
- 1/2-1 cucumber large
- 1/2 small jicama finely chopped
- 3/4 cup shelled edamame fresh or thawed
Green Goddess Dressing
- 1 cup fresh dill
- 1 cup fresh parsley
- 1 cup fresh basil leaves
- 1 cup fresh mint or cilantro
- 1/2 mayo
- 1 lime juice only
- 1/2 tsp salt
INSTRUCTIONS
- In a large mixing bowl, combine the finely chopped cabbage, diced habanero pepper, jicama, cucumber, and shelled edamame. Toss gently to mix evenly.
- For the Green Goddess Dressing, in a blender or food processor, combine the fresh dill, parsley, basil, mint or cilantro, mayonnaise, lime juice, and salt. Blend until smooth and creamy.
- Drizzle the Green Goddess Dressing over the salad mixture, starting with a small amount and adding more to taste. Toss the salad gently until all ingredients are coated evenly with the dressing.
