Ingredients:

  • 1 medium head of cabbage, thinly sliced
  • 2 large carrots, diced
  • 2 stalks of celery, diced
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until softened and fragrant, about 3-4 minutes.
  2. Add diced carrots and celery to the pot, cook for an additional 5 minutes, stirring occasionally, until vegetables begin to soften.
  3. Stir in thinly sliced cabbage and continue to cook for another 5 minutes, allowing the cabbage to wilt slightly.
  4. Pour in the vegetable broth and diced tomatoes with their juices. Add dried thyme, dried oregano, salt, and pepper. Stir well to combine.
  5. Bring the soup to a boil, then reduce the heat to low. Cover and simmer for about 20-25 minutes, or until all the vegetables are tender.
  6. Taste the soup and adjust seasoning if needed. If you prefer a thicker soup, you can mash some of the vegetables with a potato masher or blend a portion of the soup with an immersion blender.
