Hearty Cabbage Soup Recipe
A comforting and nutritious cabbage soup recipe perfect for chilly days. Packed with wholesome ingredients, this soup is easy to make and bursting with flavor.
Ingredients:
- 1 medium head of cabbage, thinly sliced
- 2 large carrots, diced
- 2 stalks of celery, diced
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 1 can (14 oz) diced tomatoes
- 6 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions:
- In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until softened and fragrant, about 3-4 minutes.
- Add diced carrots and celery to the pot, cook for an additional 5 minutes, stirring occasionally, until vegetables begin to soften.
- Stir in thinly sliced cabbage and continue to cook for another 5 minutes, allowing the cabbage to wilt slightly.
- Pour in the vegetable broth and diced tomatoes with their juices. Add dried thyme, dried oregano, salt, and pepper. Stir well to combine.
- Bring the soup to a boil, then reduce the heat to low. Cover and simmer for about 20-25 minutes, or until all the vegetables are tender.
- Taste the soup and adjust seasoning if needed. If you prefer a thicker soup, you can mash some of the vegetables with a potato masher or blend a portion of the soup with an immersion blender.
